Matcha is a Japanese green tea made with the finest tea leaves. Matcha is a shade tea, meaning that 2 weeks before picking, the tea bushes are shaded with mats or tarpaulins. The bushes respond to this by producing extra chlorophyll. Chlorophyll gives matcha its bright green color and detoxifying properties.
